Eating the first wild greens in early spring is a tradition our ancestors knew well, but which has fallen out of fashion. Here in northern California we are blessed with an abundance of edible “weeds” that support our bodies in the seasonal transition. Steeped for four weeks in apple cider vinegar, the plants impart their vitamins, minerals and phytonutrients, so you can have the cornucopia even after the hills have turned to gold. (Ingredients: Nettle, miner’s lettuce, radish and mustard greens, mustard flowers, chickweed and milk thistle)
